Gourmet Toasted Cheese Sandwich

Do you need to up your sandwich game? Then look no further because we have the goods right here and it will be sure to have your friends and fam all up in your grill begging for more.

Brought to you by our Executive Chef, Paul Barrett, this sandwich is so good, you’ll be diving to save it at the sound of a car exhaust backfiring (IYKYK)….

Gourmet Toasted Cheese Sandwich

INGREDIENTS:
  • Brioche loaf, 2 large thick slices
  • Slice of aged cheddar cheese
  • Slice of gouda cheese
  • Wholegrain mustard
  • 3 onions (red or white), sliced
  • Olive oil
  • Brown sugar (for caramelised onions)
  • Balsamic vinegar (for caramelised onions)
INSTRUCTIONS
  1. Firstly, caramelise the onions. Heat 2tbsp of olive oil in a large frying pan over low heat. Add the onions and cook slowly for 30-40 mins. Stir occasionally to prevent them from sticking or burning until they become soft and golden. If the onions start to catch, add a splash of water to the pan and mix well. Add 2tbsp brown sugar and 1-2tbsp balsamic vinegar. Keep cooking on a low for another 5mins, stirring occasionally until the mix is sticky, the sugar has dissolved and the vinegar has reduced. Set aside.
  2. Cut crust off brioche loaf.
  3. Cut two thick slices of loaf, butter both sides.
  4. Brush one side of the sliced bread with mustard.
  5. Add the sliced cheddar and gouda cheese.
  6. Layer some of the prepared caramelised onions overtop and assemble the sandwich.
  7. In a frying pan, over med-high heat, add a dash of olive oil and colour sandwich on both sides (or use your trusty toasted sandwich maker).
  8. If pan frying, once coloured, wack the sandwich in an oven at 160°C for 5 minutes to make sure the cheese is melted to perfection.
  9. Take out of oven and let rest for 2 minutes.
